		<description>For those of us who have known this for years, the question remains, how on earth do you get Americans to listen to this advice? Unfortunately, much like with hybrid car demand increasing with gas prices, I don&#039;t see Americans - a significant amount anyway - changing their diet till economics kicks in. Specifically, meat prices to go up and whole vegetable costs to go down. 

The article talks about Mediterranean eating habits and that is exactly the pricing scheme here (I live in Bulgaria). Meat is very expensive and vegetables, particularly when in season, are very cheap. I save a ton of money as a vegetarian here, whereas in the US I was broke trying to maintain a healthy vegan diet. Unfortunately, as with almost all environmental issues, the status quo of the US seems backwards. The high-impact options are often the cheapest and most desired (meat, cars, suburbs) and the healthy, sustainable options are often the most expensive and carry stigmas (vegetables, biking/walking, dense living).</description>
